More Than a Brewery: Flounder Brewing Continues to Build Community in Hillsborough  

HILLSBOROUGH, NJ — At a time when people are looking for more ways to connect locally, gather with friends and family, and enjoy experiences that feel authentic and welcoming, Flounder Brewing Co. in Hillsborough continues to demonstrate what an independent craft brewery can truly be: a hub of community life.

Located at Carriage Farm in a beautifully restored 250-year-old Dutch barn, Flounder Brewing has built its reputation on far more than just great beer. Among the newest additions is Pours & Ponytails, a creative upcoming event designed especially for dads. Hosted in partnership with instructors from Somerset County Vocational & Technical High School, the event invites dads to learn how to make ponytails and braid hair while enjoying a beer and connecting with other fathers in a relaxed, welcoming environment.

It’s a perfect example of the kind of thoughtful, unexpected programming that has become a hallmark of Flounder Brewing.

That commitment to community is reflected in a packed and ever-evolving calendar of recurring events and experiences, including:

  • Puzzle Wars, a monthly competitive puzzle night with a Flounder twist, challenging teams to race the clock — and each other — in a lively, interactive take on puzzle-solving;
  • The Somerset County Library System’s BYO Book Club, bringing readers together once a month in a casual, social setting;
  • New Jersey’s largest and longest-running brewery Irish sessions, hosted twice a month and widely recognized as a can’t-miss gathering for traditional Irish music lovers;
  • Open Mic Nights, held twice a month and showcasing local talent in the Barn;
  • Trivia every Wednesday, a weekly favorite that keeps the midweek energy high;
  • Old-Time Sessions, celebrating roots music and the rich tradition of communal playing;
  • monthly lecture series throughout 2026 commemorating the 250th anniversary of the United States declaring independence, presented as part of RevolutionNJ, bringing history, conversation, and community learning into the Barn;
  • Frequent Sunday pop-ups featuring local small businesses and artisans, including favorites such as Main Street Cheese Co. of Somerville and Breakthrough Bakery;
  • And Flounder’s House, the brewery’s acclaimed ticketed concert series that transforms the Barn into Central Jersey’s premier listening room, featuring nationally recognized touring musicians in an intimate, high-quality setting unlike anything else in the region.

Beyond its signature programming, Flounder Brewing continues to be a destination throughout the warmer months with live music Fridays (Songwriter's Corner) and Saturdays with no cover, frequent appearances from local food trucks, and abundant indoor and outdoor seating throughout the property.

And in 2026, the brewery is expanding that experience even further.

To meet growing demand and enhance its outdoor offerings, Flounder Brewing is adding an additional dozen picnic tables to its South Paddock, creating even more room for guests to enjoy the farm setting, live music, food trucks, and the open-air atmosphere that has made the brewery a favorite gathering place during the spring, summer, and fall.

“We’ve always believed the brewery should be a place for everyone,” Lees added. “Whether you’re here for a quiet afternoon with friends, a family outing, a food truck and live music night, a book club, an Irish session, a concert, a history lecture, a Sunday pop-up, or something as unique as Pours & Ponytails, we want people to feel like there’s always something here for them.”
